Moroccan Chicken Tagine with Maggi

Prepare the chicken by seasoning it with salt, pepper, and a pinch of each ground spice (ginger, cumin, paprika, turmeric, and cinnamon). Let it marinate for at least 30 minutes. Then, heat olive oil in a tagine or large skillet over medium-high heat. Brown the chicken pieces on all sides, about 5 minutes per side, and set aside.

In the same pan, sauté chopped onions and minced garlic until soft and translucent, about 5 minutes. Stir in the remaining ground spices and cook for another minute until fragrant. Crumble Maggi cubes into the pan, stir until dissolved, then return the chicken to the pan.

Add diced tomatoes, preserved lemon slices, and green olives, and enough water to cover the chicken. Bring to a simmer, then reduce heat to low, cover, and cook for about 45 minutes to 1 hour, or until the chicken is tender. Stir occasionally and adjust water as needed.

Once the chicken is cooked, remove from heat and garnish with fresh cilantro leaves. Serve hot with couscous or crusty bread to soak up the flavorful sauce.
