The Ethiopian plantain and beef stew is a recipe you should try today!
This particular delicacy is made using unripe plantain but you can as well use semi-ripe plantains if that is what you have.
Ethiopian dishes are most diverse in their flavours and may take a while to make but the Plantain and beef stew is easier.
2 fingers of Unripe Plantains
10 medium Pieces of Beef
A cup of roughly Blended Tomato and pepper mix
1 medium Bulb of Onion
2 tablespoons of Vegetable Oil
1/2 cup of Coconut milk
1 teaspoon of Chili powder
- Boil your unripe plantain in a pot of water for 10 minutes till it gets soft.
- Boil and season your meat in a different pot and set aside.
- Put oil in a different pot, stir fry the onions first till transluscent then pour the pepper and tomato, seasoning cubes and chilli powder.
- Pour the boiled plantain, coconut milk and beef into the mix, leave it to simmer on low heat for 15 minutes.
