Githeri(beans/corn) – A Kenyan Dish
This is a Kenya traditional dish that consists of boiled beans, corn kernels, and possibly mixed in with a little bit of vegetables.
This combination of Githeri is a filling and highly nutritious.
Ingredients:
- 400g boiled maize
- 1 large onion
- 2 medium-sized tomatoes(puree)
- boiled beans
- 3 cloves garlic – finely minced
- 2 ginger – finely minced
- Half red pepper bell
- 1 chili beef cube
- 1 tbs vegetable oil
- 1tbs curry powder
- 2 big carrots (chopped)
- 1 tbs salt
- Dhania
- Hoho (red)
Method of preparation:
Heat your cooking pot on medium heat and then add the vegetable oil followed by the onions and cook them until they turn translucent. Add the ginger and garlic and cook for about a minute and then add the curry powder, which will cook for a minute in order to cook off the raw taste and aroma. Add puree tomatoes and beef chili cube, stir, cover, and reduce heat to a low simmer.
Cook for about 5minutes or until the mixture reduces and thickens. Add carrots and spring onions then simmer for a minute before adding the maize and beans. Add salt and freshly cracked pepper to taste. Cover and simmer for about 10 minutes for the sauce to thicken and all the flavours to come together. Finally, add the dhania and red hoho and simmer for just a minute.
Turn off the heat and serve!!!
