How to make the perfect Akple
This is a Ghanaian swallow that can be eaten with a couple of soups.
Akple, a traditional delicacy of the Ewes tribe in Ghana is made using cassava and corn dough and is mostly eaten with okro/okra soup or pepper sauce.

Ingredients
1/2 cup of cassava dough
1 cup of corn dough
Water
Salt to taste
Instructions
- Make a mixture of the cassava and corn dough using a saucepan then mix them with a half cup of water till the mixture becomes creamy then add a little salt.
2. Put the mixture on the stove on medium heat and stir it as it heats with a strong wooden stick, adding another half cup of water all at once and continue stirring until it forms a solid mass. Do not allow the dough to become lumpy or scorch on the bottom. Turn it as you stir.
3. When the mixture becomes fairly solid and no longer “wet” looking, take a calabash (or bowl), wet it thoroughly and put a spoonful of the dough into the calabash, shaking it vigorously and rolling the dough inside into a circle or oval shape.
Your Akple is ready. Serve with hot pepper sauce and fish or okro/okra soup!
