Irio(mashed peas/potato mix)
This meal, Irio is one of Kenya’s most favourite dishes. A dish that developed at Kikuyu staple and grew all over the country.
Green peas and potatoes are boiled and then mashed up before whole kernels of maize (corn) are added to give the mash some extra starch and texture. Irio is commonly eaten with roasted Nyama choma meat (nyama na irio) or just some Kenyan-style stew.
Ingredients:
- 2-3 pound 900g sweet potatoes sub with regular potatoes
- 2/3 Tablespoons butter or canola oil
- 1 teaspoon (5g) minced garlic
- 1 onion (diced)
- ½ or more cup blanched corn
- ½ or more cup blanched peas
- ½ teaspoon paprika
- 1 tablespoon parsley
- ½ teaspoon hot sauce chili or cayenne pepper optional
- Salt to taste
Instructions:
- Preheat the oven to 400 degrees. Clean and dry the sweet potatoes, poke holes into the sweet potatoes, place in the microwave, and cook for about 4 minutes.
- Wrap it up and place it in the oven to roast for about 20 minutes or until they are thoroughly cooked
- Add two tablespoons of oil or butter to a skillet, onions and then add garlic, salt, paprika, and hot sauce, let it simmer for about a minute.
- Add the potatoes then mash with a potato masher or put it through a ricer. Stir in the corn, peas, and parsley. Adjust for salt and pepper.
- Serve warm!!!
