How to make very nutritious vegetable rice

This delicacy is born out of hunger and search for hughly nutritious food because that’s the order of the day now.

Vegetable rice is a very delicious and nutritious meal that contains high vitamin and mineral. Eating a lot of vegetables daily while you grow older helps you function better and look healthier.

This is a dish that doesn’t take time at all and it is also very tasty.

Ingredients

1.5 cups of Rice

2 cups of chopped green vegetables (Spinach or Ugwu)

1.5 Tablespoons of melted butter

Seasoning cubes

1 teaspoon of Chili powder

1.5 teaspoons of Lemon Juice

2 cloves of garlic

Instructions

  1. Wash and boil the rice for about 10 to 15 minutes. Strain the water from the rice and reduce the heat.
  2. Chop the green vegetables, wash and set them aside. Add the vegetables, butter, lemon juice and chilli powder into the pot of rice.
  3. Dice the garlic and add to the pot of rice with your seasoning cubes. Allow steaming on low heat till the rice is soft.

Your vegetable rice is ready! Serve hot with any protein.
