Method
- Wash your fish and coat with lemon or lime, seasoned with salt and pepper or use your favorite seasoning. Set aside or place until sauce is ready.In large cooking pot heat oil over medium heat,then add the fish, cook on both sides until its cooked through and crispy on both sides. Remove fish and set on a paper towel to drain the excess oil.leave about 2-3 tablespoons of oil in the pan and add the bay leave, garlic and ginger, stir-fry for about a minute making sure the garlic does not burn,Now add onion, bell peppers, carrots, thyme, scotch bonnet, sugar, Worcestershire sauce, and all other spice then continue stirring for few minutes. Add vinegar, mix an adjust salt and pepper according to preference. Let it simmer for about 3minutes. Discard bay leave, thyme now spread your fried sauce over the fried fish and serve with bammy.Enjoy!
