This jamaican relish is not just called festival,the name was coined from the beauty its posses when it’s on a plate,and the salivating taste that emerges when its munched on.This treat which is also called Caribbean dumpling comes along with chicken or fried fish alongside other dishes is made from cornmeal,flour,spice,milk,and sugar.The relish is made by frying.
Ingredients
- 1 cup cornmeal
- flour
- Sugar (granulated)
- 1tsp baking powder
- pinch of salt
- Vegetable oil
Method
Start by Mixing your cornmeal, flour, baking powder, sugar, and salt in a bowl, then add water to make a stiff dough,rub your hands in flour so the dough dnt get sticky on your palm while kneading. Knead the dough on a lightly floured surface for couple of minute . Divide the dough into portions. Roll each portion into a small sausage shape. Pour enough oil into a frying pan, Heat the oil over medium-high heat until its bringing out heat then carefully slide a few of the dumplings into the oil, and do it not to over crowd the frying pan careful not to crowd the frying pan. Fry and turn when necessary until golden brown on each side, adjusting the heat if necessary, then Move them to paper towels to drain. Repeat with the remaining fritters. Eat ‘them hot as a dumpling or with chicken and coffee. Enjoy!
