Sweet potato pudding recipe
This is a jamaican munchon dessert which major ingredients is sweet potato made into a thick consistency pudding that is quite easy to make and an easy grab bite at any time of the day when you are looking to eat something light.The sweet potato pudding is a go to choice.
Ingredients
- Sweet Potato
- Cinnamon powder
- Dark sugar
- All purpose flour
- Margarine (melted)
- Nutmeg (grated)
- Coconut Milk Powder
- Salt
- Vanilla extract
- Rum
- lime juice
- Brownies (optional)
Method
Peel your sweet potato then cut and grate the potatoes and place in a large mixing bowl. Now add your dark sugar, flour and raisins, Combine Coconut Milk Powder and water then mix well and add it to the sweet potato mixture. Add your melted margarine,nutmeg,salt, cinnamon powder, vanilla, rum, lime juice and browning and all ingredients together very well.Scoop the mixture into a greased baking pan. Bake in a pre-heated oven for about 1hour or till the mixture is well baked by dipping a table knife into the baked pudding and the knife comes out with no sticky stain on the knife.Now bring out and allow to cool and serve as desired.
