Steps to making a delicious Carrot cake

Carrot cakes are made out of carrots mixed into the batter.

Ingredients:

Cake:

  • 2 ½ cups all-purpose flour
  • 2 teaspoons baking soda
  • 2 teaspoons baking powder
  • 4 eggs
  • 2 cups vegetable oil
  • 2 cups white sugar
  • 1 cup chopped pecans
  • 4 cups grated carrots
  • 2 teaspoons ground cinnamon
  • 2 teaspoons vanilla extract
  • ½ teaspoon salt
  • 1 ½  teaspoons ground cinnamon

Butter icing:

  • 1 teaspoon vanilla extract
  • 1 cup chopped pecans
  • ½ cup butter, softened
  • 8 ounces of softened cream cheese
  • 4 cups of confectioners’ sugar

Direction:

  • Heat oven to 350 degrees F (175 degrees C).
  • Oil and sprinkle some flour on a 9×13 inch pan.
  • Beat the eggs, oil, white sugar and 2 teaspoons vanilla in a large bowl.
  •  Mix flour, baking soda, salt, cinnamon and baking powder.
  • Stir in carrots.
  • Fold in pecans.
  • Pour into pan.
  • Allow it bake in the preheated oven for 40 to 50 minutes, and then insert a tiny spoon in the centre of the cake till it is done.
  • Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.
  • To Make butter icing: combine butter, cream cheese, confectioners’ sugar and 1 teaspoon vanilla in a bowl.
  • Beat the mixture until it is smooth
  • Stir in chopped pecans.
  • Frost your cake.
