Steps to making a delicious Carrot cake
Carrot cakes are made out of carrots mixed into the batter.

Ingredients:
Cake:
- 2 ½ cups all-purpose flour
- 2 teaspoons baking soda
- 2 teaspoons baking powder
- 4 eggs
- 2 cups vegetable oil
- 2 cups white sugar
- 1 cup chopped pecans
- 4 cups grated carrots
- 2 teaspoons ground cinnamon
- 2 teaspoons vanilla extract
- ½ teaspoon salt
- 1 ½ teaspoons ground cinnamon
Butter icing:
- 1 teaspoon vanilla extract
- 1 cup chopped pecans
- ½ cup butter, softened
- 8 ounces of softened cream cheese
- 4 cups of confectioners’ sugar
Direction:
- Heat oven to 350 degrees F (175 degrees C).
- Oil and sprinkle some flour on a 9×13 inch pan.
- Beat the eggs, oil, white sugar and 2 teaspoons vanilla in a large bowl.
- Mix flour, baking soda, salt, cinnamon and baking powder.
- Stir in carrots.
- Fold in pecans.
- Pour into pan.
- Allow it bake in the preheated oven for 40 to 50 minutes, and then insert a tiny spoon in the centre of the cake till it is done.
- Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.
- To Make butter icing: combine butter, cream cheese, confectioners’ sugar and 1 teaspoon vanilla in a bowl.
- Beat the mixture until it is smooth
- Stir in chopped pecans.
- Frost your cake.
