Ofada sauce recipe
This is a popular Nigeria traditional sauce recipe which is used to eat not just Ofada rice but can be used to eat various types of dishes.The recipe is made with assorted meats,prawns,egg or cow hyde depending on how you want it and mostly commonly used to eat Ofada rice a local grown traditional grains that differs from the normal rice grains we know.Here is a simple guide on making the sauce.
Ingredients
Fresh pepper(ground)
Prawn
Meat(assorted)
Locust beans(Eru)
Seasoning cube
Salt
egg
palm oil
Cowhyde(chopped)
Fresh tomatoes(grounded)

Wash your meat and cowhide and set aside,place your skillet over a medium heat,and put your washed meat in the pot.add your diced onions,salt,Seasoning cube and and allow to cook till meat is tender.While cooking your meat ground your fresh pepper and tomatoes in a blender ensure the pepper is not smooth then pour in a bowl.now check if your meat is tender,put the cooked meat in a bowl as well as the meat stock.Now place your pot on the gas,add in your palm oil allow to stim a bit before pouring your blended pepper,allow it to fry for 15-20 min till the water inside the pepper is completly evaporated now add your salt and Seasoning cube taste to make sure the taste is ok then add your fresh prawn,locust beans,meat,cowhide and the cooked egg if you’re using then stir all together and add a little bit of meat stock to allow all the ingredients fry .Leave the sauce on a medium low heat for about 10-15min till the meat stock is totally evaporated and the sauce looks well fried then remove from heat and serve with your cooked Ofada rice.
