Mouth-watering Zucchini Recipe

 Zucchini is the combination of eggplants, tomatoes, bell peppers, and potatoes, it is a popular middle eastern household staple.

Ingredient:

  • Yoghurt
  • Salt
  • 2 tablespoon of tomato paste
  • ½  cup of onion
  • 1 cup of chopped parsley leaf
  • ½ cup of chopped coriander
  • 2 tablespoon of olive oil
  • ½  tablespoon of grounded black pepper
  • 1 teaspoon of  grounded cumin
  • 1 teaspoon of  baharat
  • 20g of softened butter
  • 2 teaspoons of salt
  • 1 teaspoon of chilli powder
  • ½  cup of chopped mint
  • 1 cup of rice
  • 1 chopped medium tomato
  • 250g of minced beef

Directions:

  • Take off the zucchini stalks, and then carefully cut off the dried tips at the opposite ends without completely removing the flesh
  • Pierce through the zucchini from the stalk end by pushing and turning a manakra into the flesh
  • This will remove some flesh, and then you will keep piercing until you have a hole
  • Put some water in a bowl and then add 1 teaspoon salt to it
  • Thoroughly Wash the zucchini in the salted water  then drain afterwards
  • Throng some zucchini with the stuffing, leaving 1 cm free at the top to allow the filling to enlarge
  •  Zucchini is better filled with hand, hitting them on the bench in order to allow it properly settle in
  • Leftovers can be shaped into meatballs
  • Put water in a skillet then add 1 ½  tablespoon salt and tomato paste
  • Carefully boil the stuffed zucchini and meatballs
  • Allow it simmer over low heat for 1 hour
  • Voila your food is ready
