Make this healthy avocado pasta for dinner
This is a very popular dish among vegetarians in our community this days but who says everyone can’t enjoy it.
The avocado pasta is easy to make, very delicious and can go with any protein of choice which makes it a good recipe idea for the growing vegetarian population in West Africa.

Ingredients
1 medium avocado
2 huge handful of thin spaghetti
3 cloves of garlic
3 basil leaves (substitute – scent leaves)
1 medium roma tomato
1 scotch bonnet pepper
Seasoning cubes
1 cooking spoon of vegetable oil (or olive oil)
2 pieces of small turkey sausage
Instructions
- Blend the avocado, basil leaves, garlic, oil and seasoning cubes in a food processor or blender till you get a smooth paste.
- Parboil the spaghetti in a pot under medium heat then pour the avocado mix afterwards and stir.
- Dice the pepper and tomato then pour into the pot. Stir in the turkey sausage afterwards.
Your avocado pasta is ready! Serve hot.
