How to prepare Jamaica Run down stew(run-dun)
This is another mouth watering stew prepared by the jamaicans,Run-Down refers to fish stew, The stew is made using Mackerel which is a popular choice when making fish stew.The stew comes out with a creamy like taste and served with banana and dumpling.
Ingredients
Garlic clove
Olive oil
Coconut milk
Thyme
fresh tomatoes
Onion(diced)
scotch bonnet
Pumpkin (chopped)
Fish(Mackrel)
Banana
salt
Seasoning cube
Green banana
Pimento spice
Ground cumin
Method
Heat oil in the pot, and add onions then let it fry for about 2-3minutes until soft.Now add your minced garlic and chopped thyme, pimento and cumin and stir for 30 seconds until the fragrant start coming out.Now add in the chopped pumpkin,tomatoes, coconut milk,green banana and scotch bonnet (optional) and allow to the cook, then reduce the heat to a simmer and simmer uncovered for about 15-20 minutes until sauce is thickened.Add in the mackerel fillets carefully on the top and simmer for about about 5-8 minutes until the fish are cooked.Switch off the heat,remove the scotch bonnet,add your seasoning then allow to simmer on low heat.when its ready, top with herbs and serve your Jamaican Run Down warm
