How to prepare coconut Jollof rice

Ingredients
3 cups of rice
¼ cup coconut oil
1 can coconut milk (400ml)
3 cooking spoons of Nigerian stew base
2 seasoning cubes
1 medium onion (thinly sliced)
Ground pepper
4 tablespoons crayfish (divided)
Salt – to taste
Instructions
1. Wash and parboil the rice for 20 minutes. Pour the coconut oil in a different pot and put on medium heat. Add the sliced onions and let it fry till translucent and fragrant.
2. Pour the stew base into the frying oil, then add the seasoning cube, coconut milk, pepper, half of the crayfish and a cup of water. Cover and let it simmer on medium heat for 15 minutes.
3. Pour in the parboiled rice and stir. Increase the heat till the rice starts boiling then reduce the heat back to low medium. Cover the pot firmly and cook for 25 minutes.
4. Stir the rice with a stick or fork then add the remaining half of crayfish
Serve with any protein of choice!
