How to make Tigernut milk (Kunnu Aya)
Tiger nut milk is very rich in unsaturated fat, as well as minerals, vitamins C and E.
Also known as “Kunnu Aya” in the Northern part of Nigeria, “Offio” by Yorubas and referred to as “horchata de chufa” in Spain, Tigernut is a traditional food of Africa and Spain.
The Tigernut milk is naturally sweet, creamy with a rich and nutty flavour. It can be made by soaking the tubers in water, then blending and straining.

Preparation
1. Soak the tiger nuts and cinnamon in a mixing bowl and cover with warm water for 24 hours until it softens.
2. Move the softened tiger nuts and it’s water into a high-powered blender. Add the ginger and alligator pepper and blend till it forms a smooth paste while you keep adding water to even the blend.
3. Use a chiffon cloth to separate the drink from the chaff after blending.
Refrigerate and serve cold or over ice.
