How to make plantain moin-moin
Do you have over-ripe plantain at home that you are thinking of getting rid of? Well here is a solution to your problem.
Over-riped plantain can be used to create a very delicious special meal, made in the same way as the regular moin-moin but without using beans.

Ingredients
1 over-ripe plantain
3/4 cup of flour
1/2 red bell pepper
A handful of crayfish pieces (Or 2 tablespoons of crayfish powder for taste)
1 cooking spoon palm oil
A handful of chopped onions
1 yellow pepper (or red small pepper)
1 teaspoon salt
1/2 teaspoon of chilli powder
2 seasoning cubes
1/4 cup of water
Instructions
- Peel the overriped plantain and blend with the bell pepper, yellow pepper, onions and water.
- Pour the blended mixture in a bowl and mix with flour, oil, chilli powder, crayfish, seasoning cubes and salt.
- Scoop the mix into banana leaves, little ceramic bowls or foil containers.
- Gently place the wrapped plantain moin moin in a pot of boiling water to steam for 25 minutes.
Serve warm!
