This is a Saudi Arabian stuffed and fried pancake eaten in countries like yemen,indonisia and also Saudi Arabia. This is a popular street food item in the aforementioned countries Although the fillings may vary, some of the most popular ones include ground meat, eggs, garlic, onions, peppers, curry, and ghee.
Ingredients
- flour
- bicarbonate soda
- ground peanut
- Egg
- cheddar cheese
- Sugar
- salt
- unsalted butter
- Evaporated milk
- chocolate chunk
Method
Mix the egg, and sugar in a deep bowl till the butter and sugar is well incorporated then add water to the mixture and mix it well, then add the flour and salt. Whisk it until well combine with no lumps and set a side for about 1 – 2 hour.Prepare your filling with either nutella,cream cheese or oreo depending on your preference.Then preheat your pan Take the bater, mix the bicarbonate soda with 1tsp water,and add into the bater, mix them until well combine. Make sure your pan is hot enough and on low heat, pour half of the bater into your greased pan and spread the bater to the edge of the pan to make the crust. Than leave it until the bubble come out into the surface.When it is a half way done, take some sugar and sprinkle it on top of the martabak evenly. Close the lead and wait until it is done. Crispy and golden brown on the out side, but moist in the inside then spread your butter on the already done matarbak and cut it into Sandwiche like shape.For the filling,sprinkle your Chocolate top of it,add your grounded peanut and the evaporated milk,do this on both sides and enjoy your Matarbak.
