Have you heard of South-African Pannekoek? Check it out!

Pannekoek which means pancake is a bit different from the generally known western pancakes.

It is quite thinner but slightly thicker than the French version while you can fill it with all sorts of delicious sweet and savoury things.

The recipe that has lasted over 3 decades is very easy to make and is one the best family-loved recipes, shared in church, school and parks.

Freshly made South African Pannekoek (aninasrecipes)

Instructions

  1. Pour the eggs, lemon juice, oil and water into a bowl and mix with a hand mixer
  2. Add the flour and baking powder bit by bit while still beating with the electric mixer till the batter is smooth. Add a little water to thin out the batter.
  3. Scoop a ladle full into a non-stick pan then tilt the pan slowly to spread it out all over the pan.
  4. As soon as the pancake batter starts pulling away on the sides with bubbles on top, flip it over and cook for a few more seconds.

    Serve with cinnamon sugar sprinkled all over it.
