Recipe in Making Ekuru (Ofuloju)
This is a native meal in Nigeria made out of the use of blended beans and accompanied with fried pepper sauce.Ekuru is most common amongst the native of Kwara state and Ogun state and also called Ofuloju in the local dialect.Ekuru is very similar in preparation to moi moi bean pudding.This local dish is predominantly an often meal and not easily gotten in restaurants except they are prepared at home.
Ingredients
Beans
Leave (for wrapping)
Pepper (for the sauce)
Cow hyde(ponmo)
Fish(dried fish panla)
Egg
Palm oil
Salt
Seasoning cube
Dried pepper
Fresh tomatoes
Onion
Method for the Ekuru
Soak and wash you beans till all the skin is peeled and turned white,then set in a blender and blend but make sure the beans is not blended smooth.after blending pour in a bowl and wash your banana leave for the wrapping of the ekuru.place a pot over a low medium heat with a little bit of water then start scooping your unsmooth blended beans into the leave just like you do for Moimoi and place in the pot one after the other till the beans is finished and leave for 30-40min or until the Ekuru has a rigid texture before bringing it down to serve.
For the Sauce preparation
Clean all your ingredients and arrange in separate bowls,then blend your fresh tomatoes,pepper,onion and dried pepper together.Note:the pepper should also not be blended smooth after blending put a skillet over a medium low heat and pour in your palm oil then add the blended pepper,allow to fry till the water in the pepper evaporates and then add your salt and Seasoning cube taste it while stirring to ensure the taste is perfect the add your ponmo,cooked egg and dried fish into the sauce and leave to cook for 5-10 min or till you are sure the sauce is well cooked.serve your Ofuloju or Ekuru with your assorted pepper sauce.
