Steps in making Shorba/Shurabah a Saudi Arabia ian soup
This soup is called as “shurabah” in Arabic. The major secret of this recipe is in cooking the soup long enough for the meat to become extremely tender and for the oats to become so smooth that just melts in your mouth .

Meat
Onions
Garlic clove
Tomatoe puree
Cinnamon
Coriander leaves
Vegetable oil/butter
Cinnamon

Method
In a deep cooking pot, heat butter or oil. Add cinnamon stick and peppercorns first. Then light fry the onions and garlic for atleast 2 mins.Add the rest of the ingredients now and water. Cover the pot with a lid and let it simmer on low heat for atleast an hour until the meat becomes very tender and the soup gets thicker in Constitency. The more the amount of oats added,the thicker the soup will get,because the major reason is to get a slightly thick soup with tender meat. So add more oat according to how you want the thickness of the soup. If you do so, then increase the amount of water and the other ingredients too. See to it that it is simmered on a low heat. Oats render the thickness to it.Keep stirring it at regular intervals to avoid it from burning or sticking to the bottom. For a change, you can also add any of your favourite veggies like green peas,carrot or sweetcorn Adjust salt according to taste. Serve it while hot garnished with freshly chopped coriander leaves.
