Coconut ice cream is a very healthy drink that is quite smooth and silky and would leave you with a great filling.
2 cans of cold coconut milk
1 cup maple syrup or ½ cup honey
A pinch of salt
1 tablespoon vanilla extract
1. Blend the coconut milk, your choice of sweetener, a pinch of salt to taste, and vanilla extract until mixed.
2. Chill the mixture for 2 hours in the refrigerator before placing it in the ice cream machine.
3. Freeze according to instructions for your ice cream maker, this should take 20-30 minutes.
4. Your ice cream should be soft and not hard like ice when it’s done. You can transfer to a container suitable for the freezer and freeze an additional 4 hours for a firmer texture.
Your coconut ice cream is ready! Serve in a glass.
